5 Easy Recipes from a Chef with Diabetes by Bronte Medical Centre

Eating healthy is an important aspect of managing diabetes, but finding recipes that are both tasty and nutritious can be challenging. At Bronte Medical Centre, we understand this challenge, which is why we’ve enlisted the help of our in-house chef to create a collection of easy-to-follow recipes perfect for those with diabetes.

Here are 5 of our favorite recipes that are both delicious and diabetes-friendly:

Grilled Salmon with Avocado Salsa Ingredients:

  • 4 salmon fillets
  • 1 ripe avocado, diced
  • 1/2 cup diced tomato
  • 1/4 cup diced red onion
  • 1 lime, juiced
  • Salt and pepper, to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Season salmon fillets with salt and pepper.
  3. Mix avocado, tomato, red onion, and lime juice in a medium bowl. Season with salt and pepper.
  4. Place salmon fillets on the grill and cook for 4-5 minutes on each side or until fully cooked.
  5. Serve salmon with avocado salsa on top.

Turkey and Vegetable Stir-Fry Ingredients:

  • 1 lb. boneless turkey breast, sliced into thin strips
  • 2 cups mixed vegetables (such as broccoli, carrots, bell peppers, and mushrooms)
  • 2 tbsp. oil
  • 2 cloves garlic, minced
  • 2 tbsp. Low-sodium soy sauce

Instructions:

  1. In a large pan, heat oil over medium-high heat.
  2. Add garlic and stir for 30 seconds.
  3. Add turkey strips and stir-fry for 4-5 minutes or until fully cooked.
  4. Add vegetables and stir-fry for an additional 2-3 minutes.
  5. Stir in soy sauce and cook for another minute.

Chicken and Quinoa Bowl Ingredients:

  • 1 lb. boneless chicken breast, cooked and diced
  • 1 cup cooked quinoa
  • 1 cup mixed greens
  • 1 cup chopped cherry tomatoes
  • 1/4 cup crumbled feta cheese
  • 2 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • Salt and pepper, to taste

Instructions:

  1. Combine chicken, quinoa, mixed greens, cherry tomatoes, and feta cheese in a large bowl.
  2. In a small bowl, mix olive oil and balsamic vinegar. Season with salt and pepper.
  3. Drizzle dressing over the bowl and toss to combine.

Veggie and Bean Wrap Ingredients:

  • 4 large flour tortillas
  • 1 cup mixed greens
  • 1 cup cooked black beans
  • 1/2 cup diced red bell pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp. salsa

Instructions:

  1. Warm tortillas in the microwave for 20 seconds.
  2. In the center of each tortilla, place mixed greens, black beans, red bell pepper, cheese, and salsa.
  3. Roll up the tortilla and secure it with toothpicks if needed. 
  4. Heat a large pan over medium heat and place wraps seam-side down. Cook for 2-3 minutes on each side or until the cheese is melted and the tortilla is crispy.

Roasted Vegetable Salad Ingredients:

  • 2 cups mixed vegetables (such as zucchini, eggplant, bell peppers, and tomatoes)
  • 2 tbsp. olive oil
  • Salt and pepper, to taste
  • 1/4 cup crumbled feta cheese
  • 2 tbsp. balsamic glaze

Instructions:

  1. Preheat oven to 400°F.
  2. Mix vegetables, olive oil, salt, and pepper in a large bowl.
  3. Spread vegetables onto a baking sheet and roast for 20-25 minutes or until tender.
  4. Mix roasted vegetables, feta cheese, and balsamic glaze in a large bowl.
